Flour is 100 per cent and everything else follows. The starter's own flour and water are counted in the hydration, which is the mistake most calculators make. Scale by flour weight or by loaves, and read the result in grams.

Tell the app what you keep on the shelf and it starts to know. Starting a bake takes the flour off the shelf; a Thursday reminder tells you when something is low; a restock list links out to where to buy it. The app works without a pantry and improves with one.
